PG Recipes: Quick & Spicy Ramen with Soft Boiled Egg 

Spice up your life with this delicious and easy to make Spicy Ramen Recipe – equipped with a soft boiled egg!

serves 1          

Ingredients

1 teaspoon grated ginger

1 tablespoon grated garlic

1 tablespoon red chili flakes

⅓ cup toasted sesame oil, plus extra for pan

1 large egg

1 carrot, cut into ¼” slices

1 bunch broccolini, cut in half 

1 package spicy ramen

1 tablespoon black sesame seeds, optional

To prepare:

 

1. In a medium heat-safe bowl, combine the ginger, garlic, and red pepper flakes. Stir to combine. Over medium-low heat, warm the sesame oil in a small pot to approximately 330°F. Pour the warmed oil over the spice mixture and stir to combine. Set aside. 

2. Bring a medium pot of water to a boil (make sure the amount of water is enough to submerge the egg completely). Gently lower your egg into the boiling water and cook for 6 ½ minutes. Transfer the egg to a bowl of cold water (add a few ice cubes if you’d like) and set aside.

 

3. Drizzle sesame oil in a pan and saute the carrots and broccolini over medium-high heat. Add salt and a touch of chili oil if desired. Cook for 5-10 minutes, or until the veggies are tender and cooked through. 

 

4. Using the same pot you used to boil the egg, prepare the ramen according to the instructions on the package. Peel and slice the soft boiled egg in half. Transfer the cooked ramen to a bowl and top with veggies, egg, sesame seeds, and extra chili oil to taste.
